Dodi's Grilled Peaches + Cream

Since one of our first family trips, Dodi and I bonded over trying to find a way to eat all the food purchased, by the time we leave the Airbnb.  I remember,  I made a chicken salad out of leftover dinner chicken in Taos. She lit up! She said that she appreciated that I did that, which made me all happy and so I lit up!  It's a super satisfying game to get creative and find delight in scarcity.  So without further ado I bring to you, the last supper (dessert), of the last men standing in Whidbey.

We had a pile of farmers market peaches to work with.  Dodi happened upon some rosemary, that was just dying to be picked.  So she took the peaches, sliced them in half and spread honey on their flat sides.

She then interlaced them with rosemary sprigs and told Kaley to watch them bake. Or she thought she did. lol.  They came out looking a little charred.... but out came the "jersey cream" from the local cow.

I have a strange obsession with cream when I'm pregnant. This cream in particular, was so rich it was shedding off butter on the top. It was kind of the morning coffee reject cream. But I couldn't get enough!!!

I can't rave about this dish enough...it's like the last kiss of summer.

 

ingredients

peaches (however many you want/have)

honey

rosemary sprigs (1/peach)

Heavy cream, whipping cream or jersey milk (enough to slather each peach with)

 

instructions

vaguely..... 

  • set oven to 375ish
  • cut peaches in half, slather flat side with honey, place them honey side up.
  • lace some sprigs of rosemary throughout
  • bake.... ~30-45minutes (a glass of wines time)  Until crispy on top
  • Slather that in heavy cream, don't be shy!
