Horseradish + Beets
Horseradish with Beets is sooooo good with beef or pork. For the majority of the recipe I used this yummy one from Panning the Globe.

The only modifications I made was to use fresh beets, and sub Ume Plum Vinegar for traditional vinegar.

Cut off the tops and peel like an apple. Then boil for about the time it takes for your toddler to loose interest in stamping the cut ends and skin on paper…maybe a little longer. You want the beets to be soft but not mushy. Remove and let cool, then grate with a cheese grater.

I opted for Ume Plum Vinegar because my friend Nina gave me bottle for all the health benefits. That little Ume packs a big punch!
